1/2 cup light vanilla soy milk

6 egg whites

2 Tbsp. sugar free syrup
(We used Cary's Sugar Free Syrup)

1/2 tsp. ground cinnamon

1/2 tsp. vanilla extract

1/2 cup ground flaxseed

2 cups corn flakes

6 slices of whole wheat bread
(When we used Arnold Double Fiber Whole Wheat Bread the total fiber per serving was 18 grams!)

Crispy French Toast

1. In a large bowl mix together the first five ingredients, soy milk through vanilla extract.

2. In a second large bowl, pour the corn flakes in and smash them. Once crushed, they will fit in a single cup. Add the ground flaxseed and mix it together with the corn flakes.

3. Heat a non-stick frying pan over medium heat. Dip both sides of the bread into the milk/egg mixture, then dredge through the flaxseed/corn flakes.

4. Spray the pan with fat-free cooking spray and cook each side of the french toast, about 3-4 minutes per side. Once it's browned, remove from the pan and serve.


Yield: 3 servings


This is a Freezer Friendly Recipe!


Freeze each serving for easy re-heating later.

To thaw, microwave the french toast on high for approximately 3 - 4 minutes. Top with sugar free syrup and enjoy!
