1/2 cup low sugar orange juice
(We used Minute Maid Premium Light)

1 cup fat free milk

1/2 cup evaporated skim milk

2 Tbsp. sugar free honey
(We Used Honey Tree Sugar Free Imitation Honey)

1 cup fat free ricotta cheese

1/4 tsp butter extract

1/4 tsp. bubble gum flavor LorAnn Oil

1 package (1 oz.) Sugar Free, Fat Free, Lemon Jell-O Pudding

8 marschino cherries


Bubble Gum or Lemon Parfait

1. Put the first six ingredients, orange juice through butter extract in a blender. Mix it up thoroughly until the cheese is no longer lumpy, about a minute.

2. If you want it to be bubble gum flavored, add the LorAnn Oil next and blend another 10 seconds. If you want lemon flavor, skip this step.

3. Pour the entire mixture into a large bowl. Use a whisk to mix in the package of Lemon Jell-O Pudding for about 2 minutes. Then pour the parfait into individual serving bowls, about 3/4 cup per serving.

4. Chill the parfait for one hour. Then top each serving with 2 marschino cherries.


Yield: 4 Servings
