(This recipe is higher in sodium. If you're on a low sodium diet, you should consider another option.)

1/2 lb. boneless, skinless chicken breast

1/2 cup lower sodium salsa

1/2 jalapeno pepper (1 oz.), sliced

2 Tbsp. black olives, sliced


You can prepare individual servings in advance and store them in the refrigerator for up to a day. Then if you're having a party, simply put them in the oven an hour before so they're ready when guests walk in.

Salsa Baked Chicken

1. Preheat oven to 400 degrees Fahrenheit. Get a piece of tin foil that's large enough to wrap the chicken in.

2. Put the chicken breast in the middle of the foil, then pour the salsa, pepper and olives on top. Close the chicken up in the foil and put on a baking sheet.

3. Bake for 60 minutes and then serve. If you make extras, put them in microwave safe dishes and freeze.


Yield: 1 Serving

You can freeze individual portions for easy re-heating later.

Make sure to freeze them in freezer safe containers.

Microwave for approximately 3-5 minutes, keeping the container open a little to allow steam to escape.
