Maple-Roasted Sweet Potatoes

3 pounds sweet potatoes (9.5 cups), peeled and cut into 1 1/2 inch pieces

3 Tbsp. butter, melted

1/2 cup sugar free syrup
(We used Cary's Sugar Free Syrup.)

1 1/2 Tbsp. lemon juice

1/2 tsp. salt

black pepper, ground to taste
(We used 1/4 tsp.)


Maple-Roasted Sweet Potatoes

1. Preheat oven to 400 degrees Fahrenheit. Then arrange the sweet potatoes in a layer in a 9x13 glass baking dish.

2. Heat the butter in a sauce pan, then stir in the maple syrup, lemon juice, salt and pepper. Pour the syrup over the sweet potatoes and toss to coat.

3. Cover the sweet potatoes and bake for 15 minutes. Uncover, stir and put back in the oven for another 15 minutes. Remove from the oven, stir and return to the oven, three more times, baking for 15 minutes each time. The sweet potatoes are done when they're tender and start to brown.

This is a Freezer Friendly Recipe!


Sweet potatoes can be frozen, but when you re-heat them they may come back mushy. If you don't like mushy, don't freeze this recipe.

Make sure it's tightly sealed inside freezer safe containers.

Microwave each serving for approximately 1 - 2 minutes, depending on microwave strength.
