Ingredients


1 package (20 oz.) extra lean ground turkey

fat free olive oil spray

1 small (3/4 cup) red onion, diced

2 Tbsp. scallions, diced

3 cloves (1 1/2 tsp.) garlic, minced

1 1/2 tsp. ground cumin

1/2 cup Quaker 1 minute oats

1/4 cup fat free buttermilk

4 egg whites

3 Tbsp. chopped fresh basil

3 Tbsp. chopped fresh parsley

1/4 tsp. ground black pepper


1 medium (7 oz.) cucumber

1/2 cup fat free sour cream

1/2 cup low fat sour cream

3 Tbsp. fat free cream cheese

2 Tbsp. dried chives, minced

2 tsp. dill spice

1/4 tsp. ground coriander seed


1. Place the ground turkey in a medium sized mixing bowl and set aside. Heat a non-stick pan over medium heat. Once hot, lightly coat with fat free olive oil spray, then add the red onion and scallions. Saute until they're softened, about 3 to 4 minutes. Pour them in the mixing bowl with the ground turkey.

2. Add the garlic, cumin, oats, buttermilk, egg whites, basil, the parsley and 1/4 teaspoon of the pepper. Mix everything together gently, but thoroughly.

3. Use a small scoop or spoon and divide the mixture into 2 tablespoon portions and roll them into smooth round balls. (It should make about 2 dozen balls.) Place the meatballs on a parchment paper lined baking sheet and cover it with plastic wrap. Put it in the refrigerator and chill for about 1 hour. (You can also make this a day ahead of time so during a party you simply put the trays into the oven to bake.)

4. While the meatballs are chilling, make the dipping sauce. Skin and cube the cucumber, then put it in a food processor or blender. Add in the remaining ingredients, the fat free sour cream through the ground coriander seed. Pulse or blend it until it's a creamy consistency (about 1 minute). Cover and refrigerate the dipping sauce until you're ready to serve the meatballs.

5. Preheat the oven to 400 degrees Fahrenheit. Coat the meatballs lightly with fat free olive oil cooking spray and bake them until browned, about 15 minutes. When finished, let the meatballs cool slightly and then serve with the cucumber dipping sauce.
