Ingredients
2 cups fresh strawberries, chopped
2 cups grape tomatoes, chopped
1 package (10 ounces) frozen corn, thawed
2 green onions, chopped
3 Tbsp. fresh cilantro, minced
1/3 cup olive oil
2 Tbsp. raspberry vinegar
3 Tbsp. Splenda or Stevia
2 Tbsp. lime juice
1/2 tsp salt
22 servings baked tortilla chips (12 chips per serving)Many of the dips we've tested are savory. This one is a refreshing change with strawberries and sweet corn.
1. Combine the first 5 ingredients, strawberries through cilantro in a large bowl.
2. In a smaller bowl, whisk together the next 5 ingredients, olive oil through salt. Then drizzle the sauce over the strawberry mixture. Toss and coat.
3. Refrigerate for 1 hour. Then serve with the chips.
