Curried Chickpeas Oven Roasted

Ingredients
1 can (15 ounces) low sodium chickpeas, drained and rinsed
1 tsp. cumin powder
1 Tbsp. red chili powder
1/4 tsp. turmeric powder
1/4 tsp. garam masala powder
1/2 tsp. coriander powder
1/4 tsp. garlic powder
1/4 tsp. dry ginger powder
1 Tbsp. olive oil
This is a fiber filled, high protein snack that’s surprisingly low in calories.
1. Drain and rinse the chickpeas, then set aside to dry. Preheat oven to 375 degrees Fahrenheit. Line a baking tray with parchment paper.
2. In a large bowl, stir together all the remaining ingredients EXCEPT the olive oil.
3. Pour the chickpeas into a mixing bowl and sprinkle the olive oil over the top. Cover the bowl and shake so that all the chickpeas are thoroughly covered in oil.
4. Pour the olive oil covered chickpeas into the bowl with the spices, cover and toss until the chickpeas are covered. Put the coated chickpeas onto the parchment paper, in a single layer. Bake in the oven for 30 minutes.
5. After 30 minutes, check to see if the chickpeas are crunchy. If they aren’t, continue cooking for another 10-20 more minutes. Watch closely to make sure they don’t burn.
6. Serve the chickpeas with small bowls and spoons to fill the bowls.
