Ingredients


1 cup whole wheat flour

1 scoop protein powder
(We used GNC Pro Performance 100% Whey Protein Vanilla Flavor.)

1 1/2 tsp. baking powder

1 tsp. cinnamon, ground

1/2 tsp. nutmeg, ground

1 whole large egg

2 large egg whites

2 Tbsp. Splenda Brown Sugar Blend

1/2 cup pumpkin, pureed

1 cup (8 1/4 oz) no sugar added pears (diced) and the juice
(We used Del Monte No Sugar Added Pear Chunks.)

1. In a mixing bowl stir together the first five ingredients, flour through nutmeg. Start a waffle iron heating up.

2. Lightly whisk the eggs and Splenda Brown Sugar together. Then stir that in with the dry ingredients. Kep stirring and add the pumpkin, pear juice and pears.

3. Spray the waffle iron with fat free buttery cooking spray and start pouring the waffle mix (1/3 cup per waffle) in. Close the waffle iron and let it cook until lightly browned and crisp.

4. Serve with sugar free syrup and it's a treat!

Yield: 6 Waffles - 1/3 Cup Per Waffle

To thaw, microwave on high for approximately 45 seconds to 1 minute.
