Ingredients
1 box (1.4 oz) Sugar Free, Fat Free Chocolate Jell-O
1 Tbsp. corn starch
2 Tbsp. Splenda
(We used the box that measures cup for cup like sugar.)
1 cup fat free milk
1 box of sugar free wafers (5.5 oz.)
(We used Murray Sugar Free Cookies Vanilla Wafers.)
1/4 cup sweetened coconut flakes
1. Stir together the chocolate pudding mix, corn starch and Splenda. Then add ONE cup of cold milk and whisk together for approximately 5 minutes, until it starts to set.
2. Put approximately 1 tablespoon of the pudding on a wafer, put a second wafer on top, then roll the wafer in the coconut until the edges are coated.
3. Serve at a party for snacks or after dinner for dessert.
