Ingredients


6 skinless boneless chicken breasts (average weight is 4 oz. raw per chicken breast)

1 cup (187 mL) dry white wine
(We used the individual bottles of Gallo Twin Valley Chardonnay.)

1/3 cup mustard
(We used Gulden's Spicy Brown Mustard.)

1 tsp. Worcestershire sauce

1/2 tsp. black pepper

1/8 cup extra virgin olive oil

1/2 cup sweet peas (drained)
(We used one that was No Salt Added.)

3 sweet potatoes


1. Place 6 skinless boneless chicken breasts in a 9 x 13 baking dish.

2. In a bowl mix together the next five ingredients (white wine, mustard, worcestershire sauce, pepper and olive oil).

3. Pour mustard/wine mixture on top of the chicken breast.

4. Bake at 375 degrees fahrenheit for 45 minutes or until chicken is done. (Chicken is done when it is no longer pink inside.)

5. Wash off sweet potatoes and put in microwave safe dish. Heat on high for approximately 15 minutes in microwave (if cooking all 3 together) or until sweet potatoes are soft all the way through.

6. Heat no salt added peas in microwave for approximately 3 to 5 minutes.

7. Each serving is one chicken breast, 1/2 sweet potato and 1/2 cup peas. Spoon mustard sauce over chicken and sweet potato for more flavor.

Yield: 6 Servings
