1 1/3 lbs. halibut, tilapia or other white-fleshed fish, cut into 4 portions

1/2 tsp. coriander, ground

1/4 tsp. kosher salt

1/4 tsp. black pepper, ground

1/2 teaspoon orange zest, grated

Banana-Orange Relish

2 ripe medium bananas (4.2 oz. each), diced

2 medium oranges (4.6 oz. each), peeled, segmented and chopped

1/4 cup fresh cilantro, chopped

1/4 cup fresh flat leaf parsley, chopped

2 Tbsp. lime juice

1/2 tsp. coriander, ground

1/4 tsp. kosher salt

1. Preheat oven to 450 degrees Fahrenheit. Lightly coat a baking sheet with cooking spray.

2. Divide the fish into four portions, 1/3 pound each and place it on the baking sheet. Mix the coriander, salt, pepper and orange zest together. Then sprinkle it evenly over both sides of the fish.

3. Bake the fish until it almost flakes with a knife when pressed, 8-12 minutes.

4. While the fish is baking, mix together the remaining ingredients, banana through salt in a large bowl. Divide the banana-orange relish evenly between the four servings.
