Ingredients


Sauce

3/4 cup water

1/4 cup low sodium soy sauce

1/4 cup white wine vinegar

1/4 cup sugar free honey
(We Used Honey Tree Sugar Free Imitation Honey.)

1/2 cup Splenda
(We used the box that measures cup for cup like sugar.)

1 packet (4 g) Herb ox Sodium Free Chicken Bouillon

1 1/2 tsp. garlic, minced

1 1/2 teaspoons fresh ginger root, minced

1/3 cup cornstarch

4 cups traditional brown rice OR

4 pouches of Uncle Ben's Ready Rice - Natural Whole Grain Brown

3 lbs. chicken thighs, skinless & boneless, cut into bite size pieces

4 cups (about 12 oz.) broccoli, cut into bite sized pieces

16 chile peppers, sun-dried & diced

2 cups chopped green onions

1 teaspoon ground white pepper

2 large egg whites

1/2 cup low sodium soy sauce

1 cup cornstarch

1 Tbsp. Canola oil


This recipe is higher in sodium. If you're on a low sodium diet, you should consider another option.

1. Whisk together the nine sauce ingredients, 3/4 cup water through 1/3 cup cornstarch in a mixing bowl. After it's thoroughly combined, set aside.

2. If you're serving traditional brown rice, begin preparing it according to the package instructions. If you have quick cooking rice in a packet (like Uncle Ben's Ready Rice Pouch), you can skip this step.

3. Cut the chicken into 1 1/2 inch square (bit sized) pieces. Then stir the chicken together with the next six ingredients, chile peppers through cornstarch. Set it aside.

4. Heat a large non-stick pan over medium heat. When the pan is hot add the tablespoon of oil. Then pour the chicken mixture into the pan. Keep stirring the chicken, until the pink is gone and it starts to brown. This should take about 15-18 minutes.

5. If you have Uncle Ben's Ready Rice Pouch, open the top and put it in the microwave for 90 seconds. One packet is two servings of rice.

6. After the chicken is done, add the sauce from the first step. Set the timer for 3 minutes. Keep stirring until the sauce suddenly turns a dark brown and starts to gel. Once it's gelled, it's ready. Pour a serving of brown rice on the plate and cover it with a serving of the chicken and broccoli.

NOTE: Some people like the broccoli steamed separately. Do that after step 2. Then on step 3 do NOT add the broccoli, just cook everything else together. Add the steamed broccoli on at the end when you're pouring the chicken over the rice.

You can freeze individual portions for easy re-heating later.

Make sure to freeze them in freezer safe containers WITHOUT the rice.

Microwave for approximately 3-5 minutes, keeping the container open a little to allow steam to escape. Then heat up a packet of Uncle Ben's Ready Rice to serve with it.
