6 oz. (about 3 cups) cubed and cooked boneless and skinless chicken breast

olive oil cooking spray

1/2 cup of plain, non-fat Greek yogurt

1/2 cup reduced-fat mayonnaise

1 Tbsp. minced chives

1 Tbsp. lime juice

1/4 tsp. salt

2.5 cups cubed cantaloupe

2.5 cups cubed pineapple

1 medium cucumber (1 cup), seeded and chopped

1 cup green seedless grapes, chopped in half

A great cool recipe for the summer. If you take it for a picnic, just be sure to keep it chilled.

1. Chop the chicken into cubes. Heat a non-stick frying pan on medium-high heat and spray with olive oil cooking spray. Add chicken and cook in frying pan until browned. (Approximately 10-12 minutes.) Put the chicken in a bowl, cover and place in the refrigerator for about two hours, until chilled.

2. Mix together the next five ingredients, yogurt, mayo, chives, lime juice and salt in a large bowl.

3. Stir in the fruit and chicken together with the yogurt mixture. Toss gently to combine everything, then cover and chill until ready to serve.
