3 cups of cucumbers, sliced

2 cups of strawberries, chopped

3/4 cup low fat feta cheese, crumbled

1/4 cup fat free poppyseed dressing
(We used Skinnygirl Fat Free / Sugar Free Dressing.)

You can prepare this in advance. Simply store it in the refrigerator and add the feta and dressing when you’re ready to serve.

1. Prepare the cucumbers and strawberries, then toss them together in a bowl.

2. Divide between two plates. Sprinkle the feta over each one and pour two tablespoons of dressing on each salad. Serve.
