2 low fat graham crackers [8 crackers or 2 full crackers]
(We used Nabisco Honey Maid Low Fat Honey Grahams.)

1/4 cup part skim ricotta cheese

1 Tbsp. Splenda
(We used the box that measures cup for cup like sugar.)


1/2 Tbsp. lemon zest
1/4 tsp. cinnamon, ground



Mix the ricotta cheese container up and put the mix back in. Then keep it in the fridge and make the crackers when you want a snack.

1. Start by putting two graham cracker sheets on a plate. Then put the ricotta cheese in a bowl.

2. In a small separate bowl use a fork to whisk together the Splenda and ONE of the mixes, either lemon zest or cinnamon.

3. Stir Splenda mixture into the ricotta cheese and combine thoroughly. Split the ricotta cheese blend in half and spread half over one cracker and the other half over the other cracker. Ligtly dust the crackers with a pinch of ground cinnamon and enjoy.

4. For a little more zest, add some raspberries on the top.

Yield: 2 Servings
