Ingredients
1 lb top sirloin steak boneless beef, cut into 2 inch cubes
1/2 Tbsp. olive oil
3/4 cup red wine (We used an inexpensive Bordeaux.)
1/2 cup reduced sodium beef broth
2 cups (10 oz.) of yams, cut into 1 inch cubes
2 cups carrots, chopped
1 cup celery, chopped
1 1/2 cup mushrooms, sliced
1 medium (1 cup) yellow onion, chopped
1 can (14.5 oz) no salt added diced tomatoes
1 small can (8 oz) no salt added tomato sauce
2 bay leaves
6 tsp. garlic cloves, minced
1/2 tsp. black pepper
1 Tbsp. dried rosemary
1 Tbsp. dried thyme
1/8 tsp. ground cloves
1. Prepare all the ingredients a put them in a 4-5 quart crock pot. Mix it up and turn heat on HIGH. Set a timer and stir ingredients once every hour. After about 3 hours everything should be well cooked and tender.
Yield: 6 Servings - Serving Size is Approximately 1 3/4 cups Each
You can freeze individual portions for easy re-heating later.
Make sure to freeze them in freezer safe tupperware containers.
When you heat them up, microwave for approximately 4 minutes, stir and finish heating it for another 3 minutes. Keep the container open just a little to allow steam to escape.
