Ingredients


1 medium pickle (approximately 2 ounces)

2 Tbsp. fat free cream cheese

2 thin slices roast beef


This appetizer is higher in sodium, so if you're on a low sodium diet you should choose something else.

To make this recipe we used pickles that were about 4 inches long and provided 5 slices per pickle. The volume of this appetizer makes it surprisingly filling.

1. Pat the pickles dry. Then spread the cream cheese evenly around each pickle. Stick a fork in the end to hold it up if you need help.

2. Wrap 2 slices of roast beef around each pickle. Cover and refrigerate overnight.

3. Slice the pickles into about 3/4 inch thick pieces and put a toothpick in the middle of each before serving.

Yield: Approximately 5 Servings Per Pickle (Each serving is 1 slice.)

Wrap the muffins individually so they can be taken out and heated one at a time when you want to eat.

When re-heating a muffin, wrap in a damp paper towel and it will come back much more moist.
