Ingredients
Cream Cheese Frosting
(You'll only use 1/4 of the frosting mix per pound of strawberries.)
8 oz. fat free cream cheese
2 Tbsp. butter, melted
1 tsp. vanilla
2 cups Splenda
1 Pound (16 oz.) whole strawberries (About 22 Strawberries)
One bag of frosting will cover about 88 Santas, so you'll only need about a quarter of it if you're just making a pound. Put the rest in a small bowl so it doesn't leak and store in the refrigerator. It'll keep about 4-5 days.
If you want to make them ahead of time, cover and store them in the refrigerator. Be careful! Don't just put wrap on top, because it'll smash the cream cheese on every Santa hat. Cover with a bowl or tin..
1. Put the cream cheese, softened butter and vanilla in a mixing bowl. Then beat with a mixer until combined. Slowly add the Splenda in until it's creamy. Then scoop the cream cheese frosting into a resealable plastic bag or pastry bag with a small tip. Seal up the bag and refrigerate until it starts to set, about an hour.
2. If you're using a plastic bag, cut one corner so you can squeeze the frosting out.
3. Rinse the strawberries and cut the leaves off, so they have a flat surface to rest on. Slice the top of each strawberry off, squirt frosting to fill up the space and put the top back on. Squirt another drop on the top of the cap and two more for buttons down the front. The strawberry should look like a little Santa.
Yield: Approximately 22 Servings (Each strawberry Santa is a single serving.)
