Ingredients
6 wooden skewers
12 cherry tomatoes (We alternated between red and yellow cherry tomatoes for the presentation.)
6 reduced fat mozzarella cheese string cheese sticks, each cut into 4 pieces
12 fresh basil leaves
1 Tbsp. olive oil
1 Tbsp. balsamic vinegar
This is an easy to prepare appetizer that looks fancy, but doesn't take a lot of work. To make it truly effortless and eliminate some of the fat, we replaced mozzarella cheese balls with reduced fat string cheese sticks. Serving for six takes less than five minutes to prepare.
Yes this recipe is high in fat, but it's only an appetizer. You're not supposed to make a meal out of it.
1. Take a wooden skewer and thread a cherry tomato, piece of mozzarella cheese and a basil leaf. Repeat and set the skewer on a serving platter.
2. Mix together the olive oil and balsamic vinegar. Drizzle the mixture over the kabobs just before serving.
Yield: 6 Servings, 1 Kabob Per Serving
