Ingredients
1 cup oatmeal
(We used Quaker Oats)
1 cup toasted wheat germ
1 cup whole wheat flour
1/2 cup dried apricots - chopped
2 oz. sliced raw almonds
1/2 cup raisins
10 strawberries - chopped
1 scoop (1/3 cup) protein powder
(We used GNC Pro Performance 100% Whey Protein Vanilla Flavor)
juice of 1 lemon
2 Tbsp. reduced fat peanut butter
1 tsp. ground cinnamon
4 egg whites
1/2 cup Cary's Sugar Free Syrup
(This is a sugar free maple syrup replacement.)
1. Preheat the oven to 350 degrees Fahrenheit. Spray an 8x8 inch baking pan with fat-free cooking spray (or for easier bar removal line the bottom of the pan with parchment paper).
2. Combine all the ingredients except the egg whites and syrup in a food processor and pulse until the mixture is finely chopped. Then add the egg whites and syrup and pulse until the mixture resembles a coarse paste. (You can mix the ingredients together by hand, but the consistency of each bar will be a little more firm.)
OPTION 1
Transfer the paste to the 8x8 baking pan and spread evenly, Bake for 20 minutes. Let it cool, cut into 10 bars and serve or freeze.
OPTION 2
Take 4 heaping tablespoons of mixture and roll in oatmeal, shape into bars and place on sprayed cookie sheet (or for easier bar removal line the bottom of the cookie sheet with parchment paper). Bake for 20 minutes, cool and serve or freeze.
Yield: 10 Servings
Freeze each bar for easy re-heating later.
Microwave each bar for approximately 2.5 minutes. Make sure to keep it covered so it doesn't lose moisture. Cover the bar with a damp paper towel to keep it softer.
