Ingredients
fat free cooking spray
3 Tbsp. butter, softened
2/3 cup Splenda

1/3 cup Splenda Brown Sugar Blend
1 large egg
2 large egg whites
1 cup (8 oz.) fat free sour cream
2/3 cup (6 oz.) unsweetened applesauce
1 tsp. vanilla extract
1/2 cup all purpose flour
1 cup whole wheat flour
4 scoops (1 1/3 cups) protein powder
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
Topping Mix
1/3 cup Splenda
(We used the box that measures cup for cup like sugar.)
1 Tbsp. sugar
1 tsp cinnamon, ground
1/2 cup miniature semi-sweet chocolate chips
1. Lightly coat a 9x13 baking pan with fat free buttery spray. Preheat oven to 350 degrees Fahrenheit.
2. Use a whisk to mix together the butter, Splenda and Splenda Brown Sugar Blend in a large bowl until crumbly, about 1-2 minutes. Then beat in the egg, egg whites, sour cream, applesauce and vanilla extract.
3. In a separate bowl mix together both flours, protein powder, baking powder, salt and baking soda. Slowly add the dry ingredients to the wet ingredients and stir until they're thoroughly combined.
4. In a small bowl, combine the topping mix ingredients together, Splenda through chocolate chips.
5. Pour half the batter into the prepared baking pan and sprinkle half the topping mix over it. Then pour the remaining batter on top and spread it out evenly. Sprinkle the remaining topping mix over that. Then lightly spray the fat free buttery spray over the top and bake for 20-25 minutes, or until a toothpick comes out clean. Cool for 10 minutes, cut and serve or freeze.
Yield: 12 Servings
Freeze chocolate chip protein bars for easy re-heating later. Make sure they're tightly sealed inside freezer safe bags or containers.
Microwave each bar for approximately 45 seconds to 1 minute, depending on microwave strength. Cover the bar with a damp paper towel to keep it softer.
