Ingredients

fat free cooking spray

3 cups whole wheat flour

2 scoops (2/3 cup) protein powder
(We used GNC 100% Whey Protein Vanilla Powder.)

2 cups Splenda
(We used the box that measures cup for cup like sugar.)

1 teaspoon baking soda

1 teaspoon salt

1 tablespoon ground cinnamon

1 3/4 cups frozen unsweetened strawberries, thawed and chopped

3/4 cup sugar free strawberry preserves
(We used Smuckers Sugar Free Strawberry Preserves.)

2 tablespoons strawberry extract

3 large egg whites, beaten

1/2 cup sugar free honey
(We used Honey Tree's Sugar Free Honey.)

3/4 cup fat free milk

1/3 cup canola oil

1 cup no sugar added applesauce

1. Preheat the oven to 350 degrees Fahrenheit. Then spray fat free cooking spray in two 5x9 inch loaf pans. Lightly dust the pans with whole wheat flour.

2. Mix the six dry ingredients, whole wheat flour through ground cinnamon together in a large bowl. In a separate bowl mix together the eight remaining wet ingredients, strawberries through applesauce.

3. Slowly mix the dry ingredients into the wet ingredients until they're thoroughly combined. Then pour the mixture into the TWO prepared loaf pans.

4. Bake for 45 to 50 minutes, until a wooden toothpick inserted in the middle comes out clean. Cool on a wire rack before cutting and serving. Cut each loaf into 8 slices.

Yield: 16 Servings

This is a Freezer Friendly Recipe!

Microwave each slice for approximately 20 to 40 seconds, depending on microwave strength. Cover the bar with a damp paper towel to keep it softer.
