Ingredients


buttery cooking spray

2 cups white wheat flour

1/2 cup whole wheat flour

2 cups Splenda

2 scoops protein powder (2/3 cup)
(We used GNC Pro Performance 100% Whey Protein Vanilla Flavor.)

1 tsp. baking soda

1/4 tsp. baking powder

1 tsp. ground cinnamon

1 tsp. ground nutmeg

1/2 tsp. salt


2 cups lowfat eggnog

4 ounces (1/2 cup) fat free cream cheese

2 large egg whites

1 large egg

2 Tbsp. vegetable oil

2 tsp. vanilla extract

2 tsp. rum extract

Eggnog is the flavor of the holiday season and you can enjoy it in this tasty protein loaf. Freeze these for easy reheating when you need a light meal in a hurry.

1. Preheat oven to 300 degrees Fahrenheit. Lightly spray the trays of an 8-mini-loaf baking pan with buttery cooking spray.

2. In a large mixing bowl thoroughly combine the first nine dry ingredients together, flour through salt.

3. In a separate bowl, mix together the seven wet ingredients, including cream cheese, until they are thoroughly combined, the eggnog through rum extract.

4. Slowly add the wet ingredients to the dry ingredients and mix together, just until combined.

5. Divide the mixture evenly between the 8 trays. Put them in the middle rack of the oven and bake for 30-35 minutes, until a toothpick inserted in the center comes out clean.

6. Set on wire rack and let cool for 2-3 minutes before serving.

You can freeze individual bars for easy re-heating later. Make sure they're tightly sealed inside freezer safe bags or containers.

Microwave each loaf for approximately 1-2 minutes, depending on microwave strength.
