Ingredients
1 1/2 cups vanilla protein powder
(We used Premier Protein 100% Whey Protein Powder.)
1 1/2 cups instant nonfat dry milk
(We used Nestle Carnation Instant Nonfat Dry Milk.)
3 Tbsp. stevia or Splenda
2 cups nonfat milk
(We used Fairlife Fat Free Lactose Free Ultra-Filtered Milk.)
1/2 cup unsalted peanut butter
This is a very unusual recipe for a protein bar from Artem & Helen - Healthy Recipes. We made a few changes to lower the fat and sugar and ended up with a delicious bar that tastes a little like peanut butter and toffee.
1. Start by lining an 8x8 pan with parchment paper or cling wrap.
2. Mix the three dry ingredients, protein powder, dry milk and sweetener in a bowl.
3. Whisk the milk and peanut butter together in a separate bowl. Keep whisking for about 2 minutes to get all the big lumps out.
4. Heat a non-stick pot over medium-low heat. If you're using an electric stove, the setting is 2.5 out of 10.
5. Whisk together the dry ingredients in with the wet. Keep mixing until all the lumps are out, and it's mostly smooth.
6. Pour everything into the pot. Use a spatula to stir everything continuously. The remaining steps will take a total of about 15 to 20 minutes.
7. The mixture will get very smooth, then small lumps will start to form. Once the lumps form, reduce heat to the lowest setting. Keep stirring and scraping the bottom of the pot.
8. The lumps will get bigger, and the mixture will get firmer and firmer until it's like dough or clay.
9. It's ready once it's firm enough to hold together.(The temperature should be about 180 degrees Fahrenheit.) Remove from the heat and continue to stir for one additional minute.
10. Place it in the parchment-lined pan and flatten it out evenly.
11. Cover and refrigerate until thoroughly chilled, about 2-4 hours. Then, remove from the pan and cut into 8 pieces.
12. You can store the individual pieces in airtight containers in the refrigerator for about 5 days, or freeze them for 3 months.
Yield: 8 Servings
You can freeze individual bars for long-term storage. Make sure they're tightly sealed inside freezer-safe containers or bags.
Microwave each bar for approximately 45 seconds. You can also leave it out at room temperature and it will be ready to eat in about an hour.
