Ingredients
buttery cooking spray (We used avocado oil spray.)
1 box (16 oz.) sugar free yellow cake mix
(We used Pillsbury Moist Supreme Sugar Free Classic Yellow Cake Mix.)
2 scoops (2/3 cup) protein powder
(We used RYSE Jet-Puffed Loaded Protein Marshmallow Flavor.)
1/2 cup Splenda
1 tsp. baking soda
1 Tbsp. cinnamon, ground
1/4 cup Splenda brown sugar blend
2 Tbsp. vegetable oil
5 large egg whites
1 large whole egg
1/3 cup fat free milk
Craving cinnamon rolls but want to keep it healthy? Try these Cinnamon Roll Protein Bars—a delicious and easy way to satisfy your sweet tooth while boosting your protein intake. Made with sugar-free yellow cake mix, protein powder, and a blend of warm cinnamon, these bars are perfect for a post-workout snack or an on-the-go breakfast.
1. Lightly coat a mini loaf pan (8 trays) with avocado oil or buttery cooking spray. Set aside.
2. Preheat oven to 350 degrees Fahrenheit.
3. In a large bowl, mix the dry ingredients, cake mix, protein powder, Splenda, baking soda, cinnamon and brown sugar.
4. In a separate mixing bowl, whisk together the wet ingredients, vegetable oil, egg whites, whole egg and milk.
5. Gently mix the wet ingredients with the dry ingredients. DO NOT OVERMIX. Stir them together until they are combined.
6. Divide the mixture evenly between the 8 trays of the mini loaf pan. Then bake for 30 minutes at 350 degrees Fahrenheit.
7. Let the loaves cool for 5 minutes; they should then be easy to remove from the pan. Add a little butter to each one for a nice finish.
You can store the extras in airtight containers in the refrigerator for up to 5 day and in the freezer for up to four months.
Yield: 8 Servings
You can freeze individual servings of for long-term storage. Make sure they're tightly sealed inside freezer-safe containers or bags.
Microwave each muffin for approximately 45-60 seconds. You can also leave it out at room temperature and it will be ready to eat in about two hours.
