Lite Apple Sauce (1/4 cup)

2 cups mashed potato flakes
(We used Idahoan Original Mashed Potatoes.)

2 Tbsp. chopped green onions

1 large egg white

1/4 cup seasoned bread crumbs, divided
(We used Albertson's Bread Crumbs Seasoned because they were lowest in sodium.)

2 Tbsp. grated Parmesan cheese

2 cups water

fat free olive oil spray

1. Combine the first six ingredients, (potato flakes, water, green onions, egg white, bread crumbs and Parmesan cheese) in a bowl. Mix thoroughly.

2. Divide into ten 1/4 cup servings, shaping each one into a small patty.

3. Coat a non-stick pan with fat-free olive oil cooking spray and start cooking the patties over medium heat. Each patty should cook approximately 3 - 4 minutes per side.

4. OPTIONAL: Serve pancakes with 1 Tbsp fat free sour cream or 1/4 cup (2 oz) lite apple sauce per pancake.

Yield: 5 servings - 2 Pancakes Per Serving
