1/2 cup dry oatmeal
(We used Bob's Red Mill Extra Thick Rolled Oats.)

1 Tbsp. dried chives

1 cup water

1/2 tsp. Teriyaki sauce

1/2 cup onion, diced

fat free buttery spray

1 large egg white

1 large egg

2 Tbsp. lowfat shredded cheese
(We used lowfat shredded cheddar.)

1. Stir together the oatmeal, dried chives, water and teriyaki sauce in a microwave safe bowl and set aside.

2. Dice the onion while heating a non-stick pan over medium heat.

3. LIGHTLY spray the non-stick pan with buttery spray and put the onions in to cook. Stir and cook for 2-3 minutes, until onion starts to turn translucent. Then pour the onion over the uncooked oatmeal.

4. Add the egg and egg white to the pan and fry it up. We preferred the yolk to be runny, but you can make it any way you like.

5. While the eggs are cooking, put the oatmeal in the microwave, cover and heat on high for 2-4 minutes.

6. Cut up the eggs and mix them in with the oatmeal, then sprinkle the cheddar cheese over the top.

Yield: 1 Serving
