Ingredients
0.5 oz. (about 1 1/2 Tablespoons) pine nuts
1 cup (8 oz.) fat free cottage cheese
1 Tbsp. lemon juice
1 Tbsp. coconut water
1/2 tsp. cinnamon
2 packets artificial sweetener (Sweeten to taste.)
1. Heat a non-stick frying pan over medium heat. Once it's hot, put the pine nuts in and stir occasionally. While the nuts are roasting, mix together the cottage cheese, lemon juice, coconut oil and sweetener in a bowl.
2. The nuts are done when they turn a toasted color and they start releasing their oils. (About 5 to 6 minutes.) Stir them into the cottage cheese mixture. Lightly sprinkle with cinnamon if you'd like.
