Oatmeal with Cheddar and Scallions

Ingredients
1/2 cup dry oatmeal
(We used Bob's Red Mill Extra Thick Rolled Oats.)
1 cup water
1/4 tsp. paprika
1 medium scallion (approx. 4 inches long), chopped
2 Tbsp. lowfat shredded cheese
(We used lowfat shredded cheddar.)
salt, to taste
black pepper, to taste
1. Stir together the oatmeal, water and paprika in a microwave safe bowl. Cover and heat on high for 2-4 minutes.
2. Stir in the cheese, then lightly season with salt and pepper. Sprinkle scallions over the top and enjoy.
