2 cups of water

1 cup dry oatmeal
(We used Bob's Red Mill Extra Thick Rolled Oats.)

1/2 tsp. cinnamon

1/4 tsp. salt

2 medium (6.5 oz. each with peel) ripe bananas

1/4 cup pecans, chopped

1/4 cup Cary's Sugar Free Syrup

1/2 cup fat free milk

1/2 tsp. vanilla extract

1. Preheat oven to 400 degrees Fahrenheit. Bring 2 cups of water to a boil. Pour the oatmeal, cinnamon and salt into the water and mix together. Reduce heat to simmer and keep stirring until tender, about 10 minutes. Remove from the heat and set aside.

2. Slice the bananas and fill the bottom of a 9-inch pie pan. Mix the pecans together with 1 Tbsp. of the syrup. Pour the milk, vanilla and remaining syrup into the oatmeal and stir together. Pour the oatmeal over the bananas and sprinkle the nuts on the top.

3. Bake for 20 to 25 minutes, until browned. Then remove from the oven and let it cool down for 5 minutes. Slice into 4 portions and serve.

Oatmeal Pecan Pie 

This is a Freezer Friendly Recipe!

You can freeze individual portions for easy re-heating later.

Microwave for approximately 2 minutes. Keep the container open a little to allow steam to escape.

Serve it with a side of ice cream for a really good dessert!
