3/4 cup fat free milk
1/2 tsp. vanilla extract
1/3 cup Splenda or stevia
1/4 tsp. salt
1/2 cup whole wheat pastry flour
buttery cooking spray
1 cup sliced fresh strawberries

This is one of the easiest pancake recipes you can make. Everything gets mixed together and baked all at once in the oven. A single slice is a great snack, but you can eat the entire thing and it's still under 500 calories.
1. Preheat oven to 425 degrees Fahrenheit.
2. Put the next five ingredients into a blender, milk, vanilla, sweetener, salt and flour. Pulse until flour is completely mixed in.
3. Coat an 8-inch cast iron skillet with the buttery spray. Pour the batter in and drop the strawberries around on top.
4. Put the skillet in the oven and bake until puffed and golden, about 20 to 25 minutes. Once it's done, remove from the oven and serve immediately. Add syrup to taste.
Yield: 4 Servings - 1/4 of Pancake is a Serving
You can freeze individual servings for easy re-heating later. Make sure they're tightly sealed inside freezer safe containers.
Microwave each serving for approximately 2 - 3 minutes and enjoy.
