Ingredients


3 large egg whites

1 large whole egg

2 Tbsp. fat free milk or half & half

1/4 tsp. curry powder

1/8 tsp. ground cardamom

pinch of salt

pinch of ground black pepper

buttery cooking spray

1/2 cup chopped tomatoes


This is a tasty change from traditional scrambled eggs.

1. Heat a non-stick pan over medium heat.

2. Whisk together the first seven ingredients, eggs through black pepper in a medium bowl.

3. Lightly coat the pan with buttery cooking spray. Then pour the egg mixture in, cook and stir the eggs until they thicken and no liquid egg remains.

4. Pour in the tomatoes, mix and saute for about 30 seconds, until they've warmed.

5. Serve everything together on a plate. We recommend adding a slice or two of low calorie toast for healthy fiber and a few more calories.
