Ranchero Sauce

1/4 cup onion, diced

1 garlic clove (1 tsp.), minced

1/4 cup fresh cilantro, coarsely chopped (Plus more for garnish.)

1 jalapeno, seeded & chopped

1 Tbsp. agave sweetener

2 tsp. lime juice

sea salt to taste

1 can (15 oz.) crushed fire roasted tomatoes

Eggs & Oats

1 whole large egg

3 large egg whites

1/2 cup rolled oats
(We used Quaker Oats.)

2 Tbsp. fat free milk

buttery cooking spray

The combination sounds a little crazy, but I tried it one morning when I had a particularly busy day ahead of me. I really wanted eggs, but I needed some fiber to sustain me. That's how I ended up combining the eggs and oatmeal. But I also wanted it to taste good, so I covered it with the ranchero sauce I made for my No Huevos Rancheros dish. Everything came together in this tasty and filling dish.

Ranchero Sauce

1. Make the ranchero sauce first and store it in the refrigerator or freeze individual servings.

2. Take all ranchero sauce ingredients, 1/4 cup onion through 1 can crushed fire roasted tomatoes and put them in a blender or food processor. Process until smooth, approximately 1 minute.

3. Transfer into a small sauce pan and warm over medium-low heat. Simmer until ready to serve.

4. This makes 8 servings of Ranchero Sauce, 4 tablespoons per serving. You can store the ranchero sauce in the refrigerator for up to 4 days or freeze individual servings in an ice cube tray for quick reheating in the microwave.

Eggs & Oats

1. Mix together the eggs, rolled oats and skim milk.

2. Heat a non-stick pan over medium-high heat. Once it's hot, spray the pan with buttery cooking spray.

3. Add the egg and oatmeal mixture to the pan and scramble just as you would ordinary eggs. (You can make them wet, dry or in-between. That's according to your preference.)

4. Once the eggs are cooked, add them to your plate and top with 4 tablespoons of Ranchero Sauce.

5. There are plenty of other options to top these with. Some people like sweet and might add honey, Splenda, fresh fruit and spices like cinnamon. More savory options include peppers, cayenne or hot sauces. If you choose your own toppings, just use the nutritional breakdown of the Eggs & Oats and add in whatever you top it with.

This is a Freezer Friendly Recipe!

You can freeze individual servings of the Ranchero Sauce in ice cube trays.

Microwave each serving for approximately 1 minute (or until thawed) and serve.
