Ingredients


1 (12.35 oz.) package sugar free brownie mix
(We used Pillsbury Sugar Free Brownie Mix Chocolate Fudge.)

2 scoops (2/3 cup) vanilla protein powder
(We used GNC Pro Performance 100% Whey Vanilla Cream Protein Powder.)

1 cup Splenda or stevia

4 large egg whites

1/3 cup fat free sour cream

1/4 cup fat free milk
(We used Fairlife Fat Free Milk because it's lower in sugar and higher in protein than regular fat free milk.)

3 Tbsp. water

buttery cooking spray


Toppings

6 Tbsp. low-fat butter
(We used Smart Balance Light.)

1 1/2 cups sugar free syrup
(We used Cary's Sugar Free Syrup.)


I was looking for a waffle recipe high in fiber and protein while low in sugar. After going through more than a dozen bland-tasting recipes, I found one that started with a brownie mix. I grabbed a box of the Pillsbury sugar free brownie mix and kept experimenting.

I ended up with this super high fiber chocolate waffle that takes less than 10 minutes from start to finish. I can even freeze the extra waffles for quick reheating when I'm even more pressed for time.

1. Mix the first three dry ingredients, brownie mix, protein powder and Splenda together in a large mixing bowl.

2. Slowly stir in the next four wet ingredients, egg whites, sour cream, milk and water until it's thoroughly combined.

3. Bake in a preheated waffle iron, according to the manufacturer's instructions, until fluffy. I like to spray a little buttery cooking spray onto the waffle iron to make sure they don't stick. Each waffle is approximately 1/2 a cup of material.

4. I like to add the toppings, half a tablespoon of butter and a quarter of a cup of sugar free syrup over each one before serving.

Yield: 6 Servings, 1/2 Cup Per Serving


Brownie Waffles

This is a Freezer Friendly Recipe!

You can freeze individual servings for easy re-heating later.

Put a damp cloth over the top, then reheat for 90 seconds in a microwave on high.

When it's spongy and warm to the touch, add the butter, syrup and enjoy.
