Ingredients
10 slices of whole wheat bread, cut into 1/2 inch squares
(We used Dave's Killer Bread 100% Whole Wheat Organic Bread.)
2 bell peppers, any color, chopped
2 cups onion, chopped
1 pound 93% lean ground beef
1/2 pound breakfast sausage
8 large egg whites
2 large whole eggs
1 1/2 cups fat free half & half
1 Tbsp. everything bagel seasoning
1 1/2 tsp. dried mustard
1 tsp. dried parsley
1/4 tsp. paprika
1/4 tsp. black pepper, ground
1 cup fat free cottage cheese
1 cup fat free cheddar cheese, shredded
1 cup sharp cheddar cheese, shredded
Christmas morning chaos? Not this year. This overnight breakfast casserole is your secret weapon. Assemble it Christmas Eve, refrigerate overnight, and wake up to a stress-free morning. Just pop it in the oven while gifts are opened.
Loaded with sausage, beef, peppers, onions, and three types of cheese, it feeds a crowd and tastes like you spent all morning cooking. But you didn't. You were sipping coffee in your pajamas.
Make-ahead magic for one of the busier mornings of the year.
1. Cut bread into 1/2-inch squares and place in a large mixing bowl.


2. Heat a large skillet over medium heat. Add beef and sausage, breaking apart as it browns. Once no pink remains, transfer meat to the bowl with the bread.



3. In the same skillet, sauté peppers and onions until peppers soften and onions start to brown. Add to the meat and bread mixture.


4. In a large bowl, whisk together egg whites, whole eggs, and half and half.

5. In a small bowl, combine everything bagel seasoning, dried mustard, parsley, paprika, and pepper. Whisk into the egg mixture.


6. Stir cottage cheese into the egg mixture, then mix in both cheddar cheeses.


7. Pour egg mixture over the meat mixture and stir everything together.


8. Transfer to a 9x13-inch casserole dish, cover, and refrigerate overnight.


9. In the morning, preheat oven to 350°F. Remove cover and bake 40 to 45 minutes, until golden brown across the top.

Yield: 8 Servings

You can freeze individual servings for easy re-heating later.
Reheat for 2 to 2.5 minutes in a microwave on high.
