Ingredients
1 reduced fat graham pie crust
(We used Keebler Ready Crust Reduced Fat.)
2 cups frozen blueberries
2 Tbsp. lemon juice
2 tsp. powdered plain gelatine
8 oz. reduced fat cream cheese
8 oz. fat-free cream cheese
14 oz. fat-free sweetened condensed milk
fresh mint leaves for garnish
1. Puree 1.5 cups of blueberries (thawed) and mix them with lemon juice in a microwavable bowl.
2. Mix gelatine with blueberries and let stand for 10 minutes.
3. Microwave blueberry/gelatine mixture for 15 seconds on medium to dissolve gelatine, then mix with an electric mixer on medium speed. Add in cream cheeses and sweetened condensed milk.
4. Pour mixture over the graham crust and chill in refrigerator until set. Garnish with mint and remaining blueberries.
