1 cup boiling water
2 packages (.6 oz each) Sugar Free Cherry Jell-O
3 oz. fat free cream cheese
2 12 oz. cans of diet cherry soda
1 can (20 oz.) no sugar added cherry pie filling
(We used Comstock No Sugar Added Cherry Pie Filling sweetened with Splenda.)
1. Bring water to a boil. Then pour 1 cup over the packages of Jell-O in a large mixing bowl. Cut up the cream cheese into cubes and drop into the bowl, then mix together with a blender until thoroughly combined. (We used the hand blender shown at the right.)
2. Next pour the soda over top, slowly stirring the mixture together. Soda will foam up, let it dissipate as you keep stirring. Finally, stir the cherry pie filling in.
3. Pour everything into a pan or mold. (We used a bundt cake pan for the mold.) Refrigerate for 4 hours or until it sets.
4. To serve, heat the pan for a few seconds in warm water and place tray on top of the pan. Flip the pan over and Jell-O should fall out formed onto plate. Cut into 8 pieces and serve.
