Ingredients


4.5 cups (approx. 20 oz.) cubed, seeded watermelon

1 cup Splenda
(We used the box that measures cup for cup like sugar.)

1/2 cup light/diet cranberry juice cocktail

1 envelope (1 oz.) unflavored gelatin


1. Place the watermelon and Splenda into a blender. Mix until smooth, about 1 minute. Empty contents of the blender into a bowl.

2. Pour the cranberry juice into a saucepan and add the gelatin. Let it sit for 5 minutes. Then warm the saucepan over low heat while stirring until the gelatin dissolves. Add the cranberry/gelatin mixture to the bowl with the watermelon in it and stir together for about 30 seconds.

3. Divide the watermelon blend evenly between six frozen pop molds, about 1/2 cup per mold. Let freeze and serve.

(If you don't have a pop mold, you can also freeze it in plastic cups. After you've filled the cups, put plastic wrap on top of each one, secure it with a rubber band and poke a wooden stick in the middle. The plastic wrap holds the wooden stick in place.)
