1/4 cup lemon juice

2 Tbsp. water

1/3 cup Splenda

1/2 tsp. ground ginger

4 small peaches (about 4 oz. each), halved and pitted

4 gingersnaps, crushed

1. Preheat oven to 425 degrees Fahrenheit.

2. Put the lemon juice, water, Splenda and ginger in a sauce pan and stir while bringing to a simmer.

3. Arrange peaches, cut side up, in a shallow baking dish. Pour the lemon juice mixture over the peaches and sprinkle the ginger snaps on the top.

4. Bake for 15 to 20 minutes, until the syrup thickens and peaches are tender.

Yield: 4 Servings
