1 can (20 oz.) no sugar added chunk pineapple
(We used Libby's Skinny Fruits Chunk Pineapple.)

3 Tbsp. Sugar Free Imitation Honey
(We used Honey Tree's Sugar Free Imitation Honey.)

1 Tbsp. lime juice

OPTIONAL - 1 or 2 Tbsp. of Splenda or Stevia if you like things sweeter.

1/2 tsp. minced canned chipotle chiles

Sweet and spicy. We combined pineapple, honey and chipotle chiles for a summer treat that'll wake your mouth up. For those who like things on the sweeter side, you can add a couple tablespoons of Splenda or Stevia to the mix.

1. Pour the pineapple, sugar free honey and lime juice in a blender and mix. Scrape the ingredients off the sides and make sure it's thoroughly pureed. If you like things on the sweeter side, you can mix 1 or 2 tablespoons of Splenda or stevia in at this point.

2. Add the chipotle and blend until the chile is incorporated but not pureed into the mix.

3. Divide the mixture between eight 1/3 cup molds, then freeze until solid. (Each mold will hold approximately 1/3 cup plus 1 tablespoon.)

Yield: 8 Servings
