Ingredients


2 cans (14.5 oz.) no sugar added sliced peaches
(We used Del Monte No Sugar Added Sliced Peaches.)

buttery cooking spray


2/3 cup Splenda brown sugar blend

2 Tbsp. butter, melted

1/2 tsp. cinnamon, ground

1/4 tsp. nutmeg, ground


1 box (16 oz.) sugar free yellow cake mix
(We used Pillsbury Moist Supreme Sugar Free Classic Yellow Cake Mix.)

2 scoops (1/3 cup) Protein powder

1 1/4 cup fat free milk

1/4 cup canola oil

3 large egg whites

4 Tbsp. sugar free honey


We were craving an upside down cake, but every recipe we found was packed with sugar. So with a little help from a packaged mix, we put together this extremely low sugar and low calorie version.

Peach Upside Down Cake

1. Preheat oven to 325 degrees Fahrenheit. Drain the two cans of peaches, BUT SAVE 4 TABLESPOONS of the juice. Cut the peach slices in half lengthwise, then set the peaches and juice aside.
2. Lightly spray two 8-inch round baking pans with buttery spray.
3. In a small bowl whisk together the brown sugar, butter, cinnamon, nutmeg and the 4 tablespoons of saved juice.
4. Split the mixture up between two 8-inch round baking pans and spread it across the bottom of the pans, about 7 tablespoons in each pan. Then arrange the peach slices over the top.

PROTEIN or NO PROTEIN in the Mix
PROTEIN
5. Mix together the yellow cake mix and protein powder. Then stir in the milk, canola oil, egg whites and sugar free honey.
NO PROTEIN
5. Stir the yellow cake mix together with 1 cup milk (NOT 1 1/4 cups), canola oil, egg whites and sugar free honey. Leave the protein powder out.


6. Pour the batter, evenly divided between the two pans. Then put them in the oven and bake for 30 to 33 minutes, until a toothpick inserted into the cake comes out clean. Peach Upside Down Cake Pan with Batter
7. Cool for 10 minutes before dividing into equal servings.

Yield: 2 Cakes, 8 Servings Per Cake
