Ingredients
1 large grapefruit
12 oz. fat free Greek yogurt
(We used Fage Total 0% Greek Yogurt 6 oz. Individual Serving Containers.)
1 tsp. lime peel, grated
1 Tbsp. lime juice
2 Tbsp. sugar free honey, divided
3 tsp. artificial sweetener, divided
(We used Lakanto Monkfruit Sweetener but Splenda or Stevia work too.)
3 fresh mint leaves, shredded
If you're a fan of grapefruit, you'll love this recipe. We mix two different types of artificial sweeteners together so they produce a better result than either one can individually. The creamy, sweet lime flavored yogurt surrounding the grapefruit is a tasty snack or a guilt-free dessert.
Grapefruit, Lime & Yogurt Parfait
1. Cut a grapefruit in half, then use the knife to remove the peel and outer membrane of the fruit.
2. Separate each segment, then cut them into bite sized pieces.
3. Put the yogurt in a small bowl, then stir in the lime peel, lime juice, 1 tablespoon of the sugar free honey and 2 teaspoons of the artificial sweetener.
4. Get two cups. Put 1/4 of the grapefruit pieces in one cup and 1/4 in the second cup.
5. Sprinkle 1/4 teaspoon artificial sweetener over the grapefruit in each cup. (1/2 a teaspoon total.)
6. Divide half the yogurt mixture between the two cups.
7. Divide the remaining grapefruit between the two cups.
8. Sprinkle the remaining artificial sweetener over the grapefruit, about 1/4 teaspoon per cup.
9. Divide the remaining yogurt mixture between the two cups.
10. Divide the shredded fresh mint leaves over the top, evenly split between the two cups. Then top each cup with 1/2 a tablespoon of sugar free honey.
