Ingredients


buttery cooking spray

1/2 cup whole wheat flour

1/2 cup all purpose flour

1/2 cup Splenda

1/2 cup Monkfruit Sweetener

1/4 tsp. salt

2 cups cranberries (fresh or frozen)

1/2 cup walnuts, chopped

1/2 cup lowfat butter, melted

2 large egg whites

1 large whole egg

1 tsp. almond extract

6 tsp. powdered sugar


The original version of this recipe was at AllRecipes.com. It was delicious but had over 35 grams of sugar per serving. After a few trials, we come up with one that kept all the flavor but has only 4 grams of sugar. It tastes like a slice of the holidays.

Crustless Cranberry Pie

1. Preheat oven to 350 degrees Fahrenheit. Use buttery cooking spray and lightly coat a 9 inch pie pan.

2. In a large bowl combine the wheat and white flours, Splenda, monkfruit sweetener and salt.

3. Stir in the cranberries and walnuts, and toss to coat.

4. Pour the melted butter in a second bowl, whisk in the three eggs and almond extract.

5. Stir the butter mixture into the flour mixture until combined. Pour the batter into the pie pan.

6. Bake for 40 minutes, or until a wooden toothpick inserted near the center comes out clean.

Crustless Cranberry Pie in a Pan

7. Cut into 6 slices. Serve WARM and sprinkle a teaspoon of powdered sugar over each slice. It's also good with whipped cream over the top or with a side of ice cream.
(If you make this in advance, always make sure to warm it up at least 30 seconds in the microwave before serving.)
