Ingredients

1/2 tsp. cinnamon, ground

1/2 tsp. nutmeg, ground

1 1/2 tsp. monkfruit sweetener (or alternative like Stevia or Splenda)

18 oz. fat free plain Greek yogurt
(We used 3 six-ounce containers of Fage Total 0% Milkfat.)

1 carton (8 oz.) frozen whipped topping, thawed
(We used Cool Whip Sugar Free Whipped Topping.)

1 box (1 oz.) white chocolate sugar free and fat free instant pudding
(We used White Chocolate Jell-O Sugar Free and Fat Free Instant Pudding Mix.)

1 can (14.5 oz.) mixed fruit, drained but reserve 2 Tablespoons juice
(We used Del Monte No Sugar Added Very Cherry.)

OPTIONAL - You can add 2 cans if you like lots of fruit. Drain the juice from the second can before mixing it in.

We created an Ambrosia salad with half the calories and only a quarter of the sugar that traditional recipes have.

Fruit Ambrosia - Low Sugar

1. Mix together the cinnamon, nutmeg and sweetener in a small bowl. Set aside.

2. Stir together the yogurt, whipped topping, pudding and TWO teaspoons of the cinnamon mixture in a large mixing bowl. (Save the remaining1/2 teaspoon of cinnamon mixture for topping.)

3. Take 2 tablespoons of juice from the can of fruit and stir it in until the yogurt/whipping topping mixture is smooth.

4. Fold in the drained fruit. Chill for at least an hour. (If you want a lot of fruit, you can add 2 cans and fold them in. The serving size is then 1/2 a HEAPING cup each.)

5. Divide into 10 servings of 1/2 a cup each. Sprinkle each serving with a pinch of the remaining cinnamon/nutmeg mixture.

Yield: 10 Servings, 1/2 Cup Per Serving
