1 medium tub (16 oz.) fat free cottage cheese
1 box (0.6 oz.) Jell-O Orange Sugar Free Gelatin Dessert
OR
1 box (0.6 oz.) Jell-O Strawberry Sugar Free Gelatin Dessert
1 tub (8 oz.) Sugar Free Cool Whip Whipped Topping
2 cans (15 oz. each) No Sugar Added Mandarin Oranges, drained
OPTIONAL
4 cups mini marshmallows
This is a Tik Tok recipe that was posted by ThatMidwesternMom. We liked the idea of some fruit and protein you could eat after a workout, but the original version had an insane amount of sugar. By swapping out some of the ingredients, we ended up with a tasty dessert (not a salad) with a nice protein punch.
Mandarin Orange Ambrosia Salad
1. Put the cottage cheese in a large mixing bowl. Pour the Jell-O over the top and mix together.
2. Add the Cool Whip and thoroughly drained mandarin oranges.
3. If you like marshmallows, stir them in now. Chill for 2 hours and serve.
Yield: 9 Servings of 1 cup each WITH Marshmallows or
9 servings of 3/4 cup each WITHOUT Marshmallows
