Ingredients
4 cups ice
1 container (5 - 6 oz.) low or zero sugar vanilla Greek yogurt
(We used Chobani Zero Sugar Vanilla 5.3 oz.)
1 Tbsp. lemon zest
1/3 cup pure lemon juice
1 package (0.3 oz.) lemon Jell-O Sugar Free
1 scoop (1/3 cup) vanilla protein powder
(We used GNC Pro Performance 100% Whey Vanilla Cream.)
4-6 Tbsp. Splenda or another non-nutritive sweetener like stevia, to taste

This can be enjoyed in one of two ways. When it first comes out of the food processor, it has a wonderfully creamy consistency, much like a sherbert.
You can also freeze individual servings for later. When you do, move it from the freezer to the refrigerator about 2 hours before serving, then use a fork to break it up. This way, it comes out similar to shaved ice.
You can serve it with optional sugar-free lemon cookies on the side if you like.

1. Put all the ingredients together in a food processor. Hit pulse a few times to get it started.
2. Run the food processor on high for 5-8 minutes until it has a soft-serve consistency.
3. Divide into six servings of about 1 1/4 cups per serving. Add a cookie into each one if you're looking for something a little fancier.
Yield: 6 Servings, about 1 1/4 cups each
