Ingredients


1 Tbsp. wok oil

3 Tbsp. szechuan spicy stir fry

1 green bell pepper

1 red bell pepper

1 yellow bell pepper

1/2 pound snow peas

1.5 pounds jumbo shrimp
(we used Ruby Reds)

1/4 cup cashews (unsalted & dry roasted)

1 Tbsp. fresh ground ginger

1/4 cup jasmine rice (uncooked)


1. Clean shrimp and set aside.

2. Cook rice according to package instructions. (Do not add butter or salt if package calls for it.) You should end up with 4 cups of cooked rice.

3. Cut green, yellow and red bell peppers into narrow strips.

4. Put wok oil, szechuan sauce and ginger into wok and turn on medium heat.

5. When szechuan sauce and oil are warm (approximately 1-2 minutes) add peppers and snow peas. Saute for 5-10 minutes or until vegetables are warm but still crisp.

6. Add shrimp to wok and saute for 5 minutes or until shrimp are cooked thoroughly. When shrimp turn white they are cooked.

7. Add cashews and cook one minute. Serve over rice.
