Ingredients

1 bag of Alexia Trio Fries (16 oz.)
(A brand of frozen french fries.)

1 package frozen chopped spinach (10 oz.)

3 T-Bone Steaks

This recipe is for those of you who insist on eating steak. It's higher in fat than we recommend, but the meal can be tempered by choosing healthier side dishes.

The fries we have chosen are tasty, easy to make and are very low in fat.

Make sure to trim away the fat on the steak once it's on your plate.

1. Cook fries in oven. Follow package directions: Preheat oven to 450 degrees. Arrange potatoes in a single layer on a baking sheet. Bake 20 to 25 minutes to desired color or crispness.

2. Start grill for steaks while oven is pre-heating. Set the grill for direct grilling and preheat to high.

3. Place the steak on the hot grate and grill until cooked to taste, 6 to 8 minutes per side for medium-rare, 2 minutes more per side for medium, rotating the steak 90 degrees after 3 minutes if a crosshatch of grill marks is desired.

4. Know when your steak is done. Remember medium rare is 145°F; medium 160°F and well done is 170°F. Use an instant-read meat thermometer or the "poke" test to check for doneness. An instant-read thermometer gives you the internal temperature immediately.

5. Turn the steak, don't stab. Tongs are the most important tool in the griller's workshop, enabling you to turn the steak without stabbing it. Look for spring loaded, long-handled tongs – 14 to 16 inches. (If you stab the steak the juices will drain out.)

6. Heat spinach according to package directions: Place contents of package in 1/2 cup boiling water. Bring to second boil, reduce heat and cover. Cook gently 4 to 6 minutes or until tender.

7. Give the steak a rest. After grilling, give the steak a rest for a couple of minutes to let the juices redistribute before cutting into it.

8. Serve the food!
