Ingredients
1 lb. ground turkey
(We used Butterball extra lean.)
1 packet less sodium taco seasoning
(We used McCormick.)
1/2 cup water
6 6-inch white corn tortillas
1/2 cup shredded part skim cheddar cheese
1.5 cups shredded romaine lettuce
3 vine ripe tomatoes diced
Fat free cooking spray
1. Lightly spray a medium frying pan with cooking spray and place it over a medium heat. Add the turkey. Using a wooden spoon, crumble the turkey and continue to cook until no longer pink.
2. Meanwhile, in a small bowl or measuring cup, mix the taco seasoning with the water and stir it until all the lumps are removed. Stir the mixture into the turkey and reduce the heat to low. Continue to cook the mixture until it thickens. Warm the tortillas in a pan for about 10 seconds on each side.
3. Divide the meat evenly among the tacos. Then add the lettuce, cheese and tomatoes.
4. Serve immediately.
