Ingredients
1 cup chopped celery
(About 4 oz. or 3 stalks.)
1 chopped green pepper
(About 1 cup.)
1 chopped red pepper
(About 1 cup..)
3 cups (8 oz.) sliced mushrooms
1/2 Tbsp. dill
1 Tbsp. basil
2 tsp. salt (OPTIONAL)
1 package (13.25 oz. or 375g) whole wheat penne rigate pasta
(We used Ronzoni Healthy Harvest Whole Wheat Penne Rigate.)
Fat-free cooking spray
2 lbs. 93% lean ground beef
2 jars (25.5 oz. or 722g per jar) low sodium pasta sauce
(We used Walnut Acres Low Sodium Tomato & Basil.)
Topping
1 tsp. Hot Sauce per serving. This is OPTIONAL to spice the meal up. A typical hot sauce will add 20mg of sodium per serving.
1. Chop the celery, green pepper, red pepper, and green onion. Slice the mushrooms. Put them all in a bowl and sprinkle the dill, basil and sprinkle salt over the top. (The Salt Part is Optional.) Set aside.
2. Start a pot of water boiling for the pasta. Do NOT add salt or oil. Cook penne rigate pasta for approximately 12 to 14 minutes (per package instructions). Then drain and put pasta into a large mixing bowl.
3. While pasta is cooking, lightly coat a medium frying pan with cooking spray and place it over a medium heat. Add the ground beef. Crumble the beef and continue to cook until browned and cooked through. Pour cooked ground beef over the pasta.
4. Spray non-fat cooking spray in pan that had the beef. Cook the vegetables (celery, green pepper, red pepper, green onion, mushrooms, dill and basil) over medium heat for approximately 5-7 minutes.
5. Pour jars of pasta sauce in microwave safe dish and heat for 3 minutes on high.
6. Mix together all the ingredients (the cooked vegetables, pasta, beef and pasta sauce). Serve or freeze.
Yield: 9 Servings - Serving Size 2 Cups
Freeze individual portions for easy re-heating later.
Re-heat each serving for approximately 4 minutes in the microwave on high. Then take it out, stir it and microwave for an additional 3-4 minutes.
Make sure to crack open the top of the container before you start to let hot air escape.
